E.DEHILLERIN – one of my favourite shop in Paris

E.Dehillerin is definitely one of my top 10 favourite shop in the world.

This little quaint shop is located in Paris (not far from the Louvre museum). If you take the metro, it is easiest if you stop at the Louvre-Rivoli metro. From there, head straight along Rue du Louvre and you will see the shop on your right (rue Coquillière)

So, what does this shop sells?

E.DehillerinThey sell everything and anything to do with kitchen and pastry tools and cookware. If you are into baking and cooking, you will LOVE this place. They have an amazing range of copper-pots and cast iron products.

Unlike other kitchenware shops, this place is like an organise mess. Why do I say so? Going into the shop feels like you are transported back to the previous century. Things are scattered all over the place. You’ll find goods all over the floor and some are hung on the ceiling. But, if you ask any of the assistant in the shop, they will be able to easily locate the items you are asking for.

I know many people find this arrangements to be a bit daunting. But, I love it. It’s like a treasure cove. I could easily spend 2-3 hours going thru item by item and not get bored. They also stock my favourite Staub !!!

Talking about this place makes me miss it so much already. One big tip for you guys heading there, PLEASE go during NON-peak hours. I usually go there on weekday early morning and gets plenty of attention from the assistants. Most of them can speak English but can be a tad impatient. Don’t go during weekend. It’s a nightmare to get any service / attention.

Fresh Pasta with my Atlas 150

Lesson one – DO NOT WASH your Atlas 150 !!! sob sob… being an OCD, I can’t help myself. I washed it… sigh. AND, I found some rusty bits on the cutter wheels. But, if you do get some rust, don’t worry. This is what me and my bro did to clean it up. We made a batch of dough with cheap flour and water only into very dry and hard dough. Using that, we ran it thru the cutter a few hundred times (me – exaggerating) and thank God the dough manages to pick up all these rusty bits… So, I’ve learned my lesson. Just use a slightly damp cloth to wipe everything and leave it at that.

I whipped up a batch of dough using 300gm of flour and 3 eggs with my trusty Kenwood Kmix. It’s my first time using my dough hook. It’s fun and so easy to use. After mixing everything into a ball, I let the machine knead it for about 2-3 mins before kneading it with my hand. Let the dough rest for about 30mins and it’s ready to be churn into pasta. Yippee… Dough PreparationLet me tell you – Pasta making is NOT a job for one person! You need at least 2 people. One to row the pasta and one to cradle it as it roll out. Thank God I had 3 other people helping. One to roll, one to cradle, one to lay them out to dry and mum for helping to wash up the mess we made. Lol. Hehehe…

Flattening the dough

The Atlas rolled out the pasta perfectly. It was really easy to use. First we rolled the dough using the ‘0’ setting a few times until we get the basic shape we want. Then, we start going up the dial. We made 2 batches, one up to ‘8’ and another to ‘9’. It’s too thin for fettuccini. Sigh. I think I would prefer it thicker. The next time, I’ll stop at ‘5’ or ‘6’. Very important to allow your pasta to dry sufficiently before throwing into the boiling water. I don’t have a drying rack… so we had to find a innovative solution. hehehe. Don’t worry, it’s clean. I glad-wrap the whole table surface. Drying Pasta

Fresh pasta cooks really fast. So, be very careful to test your pasta from time to time until you get the bite you want.

Marcato Atlas 150 Pasta Maker

I have been itching to try my hand on fresh-made pasta ever since attending the pasta making class last year. However, I kept procrastinating on the ground that I don’t have a pasta maker to help with the rolling and cutting. hehehe… Yes – I know I could do it manually… but then, it will means that I won’t be a proud owner of this fabulous baby!

I was a little frustrated at the price and selection of pasta maker in KL. It’s either of crappy plastic type or really expensive. I did consider getting the ‘pan-mee’ variety but I was worry it might not work. I know the pan-mee dough it slightly softer and not as much ‘chew’ compare to the pasta dough.

So, when I saw the recent sale for this Marcato Atlas 150 Pasta Maker (made in Italy), I couldn’t resist myself. LOL. Got my baby brother to lug it back from Melbourne for me. hehehe.. Thank you baby bro! 🙂

Can’t wait to use it soon and make some hand rolled pasta… look, it’s so shiny. 🙂
