Lazy Monday Dinner – Japanese Curry Rice

This has got to be one of hub and my favourite lazy meal. It’s so tasty and easy to prepare. At one time, we have this almost every fortnight at home.

Not to mention, I just got something special back from Paris which I couldn’t resist using… My brand new cocotte – the 20cm black Staub. Yes !!! I am crazy enough to lug it back all the way from France. How can I resist?! It’s so cute and i love the color. And the price !!! (It’s only about EUR 72 after VAT – about RM 290). Hence, I’m going to use this little baby to make my Japanese curry.

For me, the most important thing for a good Japanese curry is the stock you make from vegetables. This gives it an extra sweetness (without adding sugar). I prefer to use Russet potatoes when making Japanese curry rice. The reason is because I love the soft grainy texture it adds to the sauce when some bits of the potato disintegrate.

Simple ingredients – Carrot, Onion, Potatoes and meat of your choice (I prefer to use pork)

Sauté the pork in the pot until semi cook. Let the meat rest before slicing it.

After that, sauté the diced potatoes, carrots and onion till brown. Add hot water to fully cover the ingredients. Allow it to simmer until all the vege is soft. With the Staub, I only need to let it sit for 10 mins on low fire and everything gets really nice and soft.

After that, place the meat into the pot and allow it to simmer for another 2-3 minutes. Usually, I add the curry roux block piece by piece. That way, I can gauge if the thickness is to my liking or not. Once all the roux melts, the consistency of the broth will be stew-like.

Serve it with rice. (I prefer to use the Japanese short grain). ** Remember to cook the rice first. ;p

Yummy comfort food in less than 20 minutes.

Hub and I went to Kuala Selangor over the weekend and bought some really big fat frozen scallops. Kuala Selangor is a little fishing town about one hour plus away from Kuala Lumpur (famous for enjoying fresh seafood at lower price).

It’s really simple to handle frozen scallops. I just took them out from the freezer, give it a good rinse and let it thaw by itself for about 15-20 mins. After that, I give it another good rise and pat dry. (Never soak your frozen scallops in water as it will loose it’s sweetness)

Ingredients (3 person’s portion)
  • 12 nos             Scallops (sprinkle with salt and black pepper)
  • 4 bunch           baby bak-choy (separate the leaves from stem)
  • 15 nos             cherry tomatoes (halved)
  • 4 slices            bacon (julienne)
  • ½ cup              marsala wine / white wine
  • 1 tbsp              Abalone sauce
  • 1 tbsp              pre-fried garlic (I keep one jar of fried garlic in oil around)
  • 3 portion         boiled Spaghetti
     
    Sauté the scallops on high heat and remember to keep them apart (no soup formed. Or you’ll have steam scallops in the end). It’s always better to have scallops slightly undercooked. So, I manage them by pressing on them with the spoon. I like it cooked till it feels like medium rare beef bounce. Then, I’ll lift it and set it aside.
     
    Next, sauté the bacon till you see the oil release from its fat. Put in the bak-choy stem and allow it to stir fry a bit first before putting in the leaves. Add the cherry tomatoes, abalone sauce and Marsala wine (You can just use any white wine but I love the sweetness of Marsala with scallops). Allow this to simmer for 2-3 minutes.

Add the pasta and Scallop. Simmer for another 2-3 minutes and it’s done.

Dinner is serve. Chomp chomp. I had it with a glass of chilled marsala. Simple healthy meal with tons of greens. Yay !

I know many people swear off can food. But, not me.

I like having can food around. The trick is to get really good and interesting ones. It really does makes life easy especially when you have a long day at work and don’t feel like eating out or cooking.

I know can food can be boring. But, it can also be really elegantly presented. It just takes a little effort.

This is a little something I whipped up for dinner.

  • Can Smoke Oyster
  • Can Sardines in Olive oil
  • Flat Wraps (bread)
     
    Place the smoke oyster and sardines onto a little bake dish. Bake till hot.
    Toast the flat wraps till crispy (I just lay them out in the oven and flip to the other side once brown).
     
    To enjoy, just break chucks of the flat bread and scoop some of the oysters / sardines onto the crispy bread. yummzz… Delicious light dinner done in under 15 mins.
     
    Works well as finger food or hors d’oeuvres. Enjoy.
