Creamy Peach Cheesecake

Ingredient for Base

  • 13 pcs digestive biscuits
  • 70 gm melted butter
  • Pinch of salt

Ingredient for fillings

  • 500 gm Cream cheese
  • 200 gm Crème fraiche
  • 80 gm icing sugar
  • 3 tbsp lemon juice
  • 2 tbsp vanilla extract
  • 6 halves of diced can peach ***

*** The can peaches got from the supermarket here (around KL area) are all soak in syrup (couldn’t find those that are soaked in juice). It is a little sweet to me. So, what I do is to wash these peach with water, and then, let them drip dry before I cubed ‘em up. The can I got has 6 halves inside. Try not to get those which are already cubed as it tends to be softer. You would like to have the layers of different texture between the creamy cheese fillings.

Placing all the biscuit into a zip lock bag, I used a rolling pin to crush up them up finely. Then, I pour these into a bowl and add the melted butter. (For the melted butter, there’s no need to waste energy and time melting it in a pan. Just throw them into the microwave for about 16 sec. And it will be nicely melted – easy). I like the base to have a bit of saltiness in it to contrast with the sweet cheese. Mix them up until the crumbs resemble wet sand. Pour everything into a pan and pack them down. (You can use back of spoon, your fingers or anything you feel comfortable with). Once the biscuit is done, I place them into the freezer.

Cream Cheese (in room temperature so that it is soft), icing sugar, vanilla and lemon juice are all placed into a big bowl. Whisk all these to a creamy texture. Once all these are mix well, add in the Crème fraiche and continue to stir. The texture reminds me a little of mayo. Next, scoop in your peach. Remember to try and get them as dry as possible as introducing liquid will dilute the cheese and makes the base wet.

Then, pour the cheese filling over the base. Smooth it out on the top. Wrap the tray with aluminum foil and let it sit in the fridge for about 8 – 12  hours. As this is a relatively soft cheesecake. I prefer to let it sit for more than 24 hours before slicing it. You can add slices of peaches on top if you want. For me, I don’t bother as I find that it is a mess to slice them later. And I prefer to have the cheesecake in square tray as this is so much easier to divide and slice.

Look how amazing it looks with all the little cubes of peaches all over the cheesecake. Chulet LOVEs having a slice of this gorgeous yummy treat while sipping on espresso. Divine indeed. Enjoy !

It’s been ages since hub and I went out with friends to bar. Perhaps it’s the age, or maybe friends just stop asking you out once you are married. Anyway, hub had some friends down from Singapore and they were so excited catching up on old times till 2 am. By the time we reach home and get ready for oioi (sleeping), it was 3 am.

We only woke up around 11:30 am the next day. It was so hard to try and drag myself off the bed but the growling tummy was a motivation to get up. I told hub I need substance and it better be solid and fast. Seremban Favourites came to our mind and we quickly made our journey there.

The place has recently moved to the shop next door and it is now in a better environment (i.e. Air-Con !!). After placing our order, we were serve almost immediately as we order rice instead of their famous hakka mee.

I love their steam white chicken. The meat is always so juicy and soft. Hence, we ordered a bigger portion of this.

However, it will be wrong to be here and not order their famous char siew. We always have the half fat half thin version. (you can order full thin or full fat version too).

Feeling a little guilty of all those meat, I ordered a small portion of boil yau-mak (a type of vege). We dive into our food and walked out happy and satisfied.

It is not easy to miss once you reach the road below. You just need to follow the crowd and where most of the car parks. Beware if you go on weekdays as office crowd is crazy. Usually, I prefer to go on weekends and try to be there around 11:45am for lunch.

I rarely (almost never) venture into Klang area for food. Perhaps many Klang-ians would be shocked as most believe that good and tasty foods are found there. (i.e. Bak Kut Teh / Seafood)

Anyway, yesterday I had the opportunity to venture to Klang and a friend kindly show Chulet and her bro to a nice restaurant for lunch. The Restaurant frontage seems small and ordinary. Luckily the restaurant is air-conditioned as it was a really hot day. Once seated inside, our friend started ordering dishes in Hokkien (which I don’t understand at all). Patiently, I waited to be surprise as this friend loves good food and most of his recommendations are always thumbs up.

While waiting for our food, I look around and found that this restaurant won a lot of award. They went for Bak-Kut-Teh competition, Hainam Chicken Rice competition and received recognition from the Tourism Ministry ! Wow… ! wow !!

We start off with a bowl of mee-sua with ho-chien. (rice noodle with oyster). The soup looks a little starchy but once you scoop into individual bowl. Add in a dash of vinegar and some chilli sauce. It was really good. The oysters are fresh and the noodles are really smooth and not too soggy.

The next on the hit list is the fried sliced noodle. This is a specialty of the shop. The noodle consistency kind of resembles the rat’s tail (loh-see-fun) but with more stickiness to it. It was fried like the fried kueh teow style. I really like this as the taste is very fragrant.

Next is the chicken rice ball (which was HUGE – at least double the normal size you get in Melaka). The chicken ordered was fried salted kampong chicken. Really yummy as the skin was not only crispy, it was full of flavour from marinating the chicken.

Apart from these, we order stir-fry Brinjal with Long bean and Fried Lobak.

For dessert we had deep fried chocolate ice-cream !!

It was a satisfying and delicious lunch indeed… Thanks T for bringing us there and treating us too (What a generous soul !!!)
